I made two loaf-sized lemon cakes yesterday, requiring lemons galore. Juice and zest permeate every aspect of the recipe, from batter to hot syrup to sugar glaze, with tangy, tender, delicious results. A day later, the cake is nearly all gone. So now I have a lemon cake situation, because my craving for the stuff has not been satiated, but the last two slices are sitting under plastic wrap on the kitchen counter, set aside for certain other people. How much do I really care about the cake-related happiness of others? It’s an internal struggle.
Create your own cake situation. I’ve written about this recipe before, and you can access that post from January 2013 by clicking here. Buy a big bag of lemons before you start.
